Sometimes you can actually see fat in the blood after it has been sitting upright for a few minutes.  The fat floats to the top of the test tube.  This person probably ate a high fat meal.  The triglycerides (in chylomicrons) would be very high in this person.

High blood fats can cause several health problems.   Relative to heart attacks, the most important blood fat is the blood level of LDL cholesterol.  In order to prevent or reverse a heart attack, the LDL cholesterol should be below 60 mg/dl.  For individuals with multiple cardiac risk factors or who have already had some type of heart attack event, it should be below 50 mg/dl.
